Jalapeno Cornbread
Jalapeno cornbread is a delicious and easy-to-make side dish that is perfect for any meal. It is made with cornmeal, flour, eggs, milk, butter, and jalapeno peppers. The jalapeno peppers add a bit of heat to the cornbread, making it a flavorful and unique dish.
Ingredients:
3/4 cup all-purpose flour
1 1/3 cup cornmeal
¼ cup sugar
2 tsp baking powder
½ tsp baking soda
⅓ cup whole milk
1 cup buttermilk
2 eggs
8 tbsp unsalted butter, melted
1/2 cup chopped jalapeno peppers
Instructions:
Preheat the oven to 400 degrees F (200 degrees C). Place a cast iron skillet in the oven to preheat.
In two separate large bowls mix wet and dry ingredients.
Combine wet ingredients into the dry ingredients. Mix until everything is incorporated.
Add all but 2-3 tbsp of the melted butter into the batter and jalapenos. Mix until glossy and the jalapenos are well mixed into the batter.
Remove the skillet from the oven. Add remaining butter to coat the bottom and sides of the skillet.
Add the batter into the skillet.
Bake for 20-30 mins.
